Because Apple doesn't care. Siri is just something that is bolted on when you buy the hardware. Cortana was an actual product that Microsoft is trying to sell.
I don't know anybody who uses Siri for more than just setting an occasional timer or something. Usually it's a nuisance when she is accidentally activated and takes over the interface.
Anecdote: we contracted a web page, and the guy started saying "it would be a Wordpress. It has very bad press, but it's because it is widely used". Ok, we start developing in the latest version of php, and soon he say "we have to go down a couple phpversions, because x pluging don't work in the latest". Requested version had a dozen critical CVEs. Plugin in question did something really basic, like a preview card with OpenGraph data, or something like that. Something a junior could code in a day.
And that is insecure Wordpress: people lego-mounting sites without touching code, only with plugins.

That’s just because lots of people are checking if Gemini is down, and downdetector only tells you if lots of other people are viewing that downdetector page
calling it "Google's war" is an interesting take. No doubt they have added some hoops to jump through and reduced freedoms, but Apple has been leading the charge against installing arbitrary software for decades.
